豉汁煮牛百葉 (2人份)
Boiled Beef Tripe with Black Bean Sauce (2 servings)
📌材料 Ingredients:
牛百葉 Beef tripe 500克(g)
青椒 Green bell pepper 150克(g)
蒜蓉 Minced garlic 1湯匙(tbsp)
乾蔥碎 Chopped shallot 30克(g)
薑蓉 Minced ginger 30克(g)
指天椒碎 Chopped red chilli 10克(g)
📌調味料 Seasonings:
磨豉醬 Ground Bean Sauce ½湯匙(tbsp)
📌汁料 Sauce:
米酒 Rice wine 1湯匙(tbsp)
蠔油 Oyster sauce ½湯匙(tbsp)
生抽 Light soy sauce ½湯匙(tbsp)
胡椒粉 Ground white pepper 少許(to taste)
代糖 Erythritol ½湯匙(tbsp)
🔪煮法 Method:
1. 調好汁料備用
Mix all the seasonings for the sauce, and set aside.
2. 青椒、牛百葉切條
Cut green bell pepper and beef tripe into strips.
3. 中火燒熱油 , 爆香乾蔥碎、薑蓉、蒜蓉、指天椒碎、青椒、磨豉醬
Medium heat. Put in shallot, ginger, garlic, bell pepper, red chilli, and ground bean sauce, then fry them until fragrant.
4. 加入牛百葉和汁料翻炒
Add beef tripe and sauce, and keep stir-frying.
5. 上蓋焗煮3分鐘即成
Cover the wok cook for 3 minutes.
6. 撒點芫茜碎
Sprinkle some chopped coriander, and serve.
