📌材料 Ingredients:
烏頭 Flathead Grey Mullet           600克(g)

📌汁料 Sauce:
蔥油 Scallion Oil                          2湯匙(tbsp)
磨豉醬 Ground Bean Sauce         1湯匙(tbsp)

🔪煮法 Method:
1. 大火燒熱油, 混合蔥、薑、蒜、生抽和熱油調成蔥油
Heat the oil over high heat. Mix scallions, ginger, garlic, soy sauce, and hot oil to make scallion oil.

2. 混合磨豉醬、蔥油、生抽備用
Mix ground bean sauce, scallion oil, and soy sauce, then set aside.

3. 刮掉烏頭的鱗片和移除內臟

Scrape the scales off, and gut the mullet.


4. 用廚房擦乾內外

Pat dry with paper towels.


5. 將汁料均勻地塗抹內外

Spread the sauce evenly inside and outside.


6. 大火蒸8分鐘即成

Steam the mullet over high heat for 8 minutes, and serve.
