咖哩雞 (3人份)
Chicken Curry (3 servings)
📌材料 Ingredients:
雞下髀 Chicken drumsticks 300克(g)
乾蔥碎 Chopped shallot 30克(g)
蒜蓉 Minced garlic 15克(g)
咖哩醬 Curry sauce 120克(g)
即溶咖啡粉 Instant coffee powder 1茶匙(tsp)
📌醃料 Marinade:
生抽 Soy sauce 1湯匙(tbsp)
胡椒粉 Ground white pepper 少許(to taste)
🔪煮法 Method:
1. 雞鎚浸淡鹽水1小時, 可去除雪味和增加雞肉水份
Soak chicken drumsticks in mild salted water for 1 hour, which can eliminate the freezer taste and make the chicken more moist.
2. 雞鎚加入醃料醃15分鐘
Marinate chicken drumsticks for 15 minutes.
3. 中火燒熱油, 雞鎚煎至微焦後起鍋備用
Pan-fry chicken drumsticks over medium heat until golden brown, then set aside.
4. 原鍋爆香乾蔥碎、蒜蓉、咖哩醬
Put in shallot, garlic, and curry sauce. Fry them until fragrant.
5. 倒入400ml清水後上蓋, 水滾後轉小火焗煮15分鐘
Pour in 400ml of water and cover the wok. When the water boils, turn low heat and simmer for 15 minutes.
6. 加入即溶咖啡粉再焗煮5分鐘即成
Add instant coffee powder simmer for 5 more minutes, and serve.
