Beef Tripe Casserole with Sa Cha Sauce (4 servings)

📌材料 Ingredients:
牛肚 Beef tripe 700克(g)
芹菜 Chinese celery 200克(g)
蒜蓉 Minced garlic 1湯匙(tbsp)
乾蔥碎 Chopped shallot 30克(g)
薑蓉 Minced ginger 1湯匙(tbsp)
辣椒碎 Chopped red chilli 少許(to taste)
八角 Star anise 1粒(pcs)
水 Water 500毫升(ml)
📌汁料 Sauce:
老抽 Dark soy sauce ½湯匙(tbsp)
生抽 Light soy sauce 1湯匙(tbsp)
蠔油 Oyster sauce ½湯匙(tbsp)
米酒 Rice wine 1湯匙(tbsp)
沙茶醬 Sa cha sauce 2湯匙(tbsp)
🔪煮法 Method:
1. 調好汁料備用
Mix all the seasonings for the sauce, and set aside.
2. 牛肚浸淡鹽水1小時去除雪味
Soak beef tripe in mild salted water for 1 hour,
eliminating the freezer taste.
3. 牛肚汆水20分鐘
清水沖洗乾淨
Blanch beef tripe for 20 minutes, and rinse with cold water.
4. 牛肚、八角、水加入壓力鍋後煮30分鐘
Put beef tripe, star anise, and water into the pressure cooker.
Then cook for 30 minutes.
5. 30分鐘後夾出牛肚和保留清湯備用.
Take all the beef tripe out and keep the broth for late use.
6. 牛肚切條, 芹菜切段
Cut beef tripe into strips. Cut chinese celery into 2-inch-long sections.
7. 中火燒熱油, 爆香乾蔥碎、薑蓉、蒜蓉、指天椒碎
Medium heat. Put in shallot, ginger, garlic, and red chilli, then fry until fragrant.
8. 加入牛肚、汁料炒勻
Add beef tripe and sauce, and keep stir-frying.
9. 倒入牛肚湯汁, 上蓋焗煮10分鐘後備用
Pour in reserved broth, cover the wok simmer for 10 minutes, and set aside.
10. 小火預熱煲仔, 加入芹菜、牛肚
Preheat the casserole over low heat. Add chinese celery and beef tripe.
