照燒雞排 (2人份)
Teriyaki Chicken (2 servings)
📌材料 Ingredients:
雞排 Chicken chop 400克(g)
西蘭花 Broccoli 100克(g)
📌汁料 Sauce:
醬油 Soy sauce 1湯匙(tbsp)
味醂 Mirin 1湯匙(tbsp)
清酒 Sake 1湯匙(tbsp)
代糖 Erythritol ½湯匙(tbsp)
🔪煮法 Method:
1. 調好汁料備用
Mix all the seasonings for the sauce, and set aside.
2. 雞排浸淡鹽水1小時, 可去除雪味和增加雞肉水份
Soak chicken chop in mild salted water for 1 hour, eliminating the freezer taste and making the chicken more moist.
3. 雞排對半切開
Cut chicken chop in half.
4. 加入醃料醃15分鐘
Marinate for 15 minutes.
5. 西蘭花汆水2分鐘備用
Blanch broccoli for 2 minutes, and set aside.
6. 小火燒熱油, 雞排皮向下放入鍋煎至微焦
Low heat. Put chicken chops skin side down in wok. and sauté until golden brown.
7. 雞排翻面後上蓋慢煎10分鐘或直至熟透
Flip over chicken chops. Sauté, covered, for 10 minutes or until cooked through.
8. 雞排再翻面後倒入汁料, 上蓋焗煮30秒即成
Flip over the chicken chops again. Simmer, covered, for 30 seconds, and serve.
