瑞士雞翼 (4人份)
Swiss Chicken Wings (4 servings)
📌材料 Ingredients:
雞中翼 Chicken wingettes 900克(g)
薑片 Ginger slices 30克(g)
冰糖 Rock sugar 50克(g)
八角 Star anise 2粒(pcs)
📌汁料 Sauce:
水 Water 300毫升(ml)
生抽 Light soy sauce 150毫升(ml)
老抽 Dark soy sauce 100毫升(ml)
玫瑰露酒 Chinese Rose Wine 1湯匙(tbsp)
雞粉 Chicken bouillon powder ½湯匙(tbsp)
🔪煮法 Method:
1. 調好汁料備用
Mix all the seasonings for the sauce, and set aside.
2. 雞中翼浸淡鹽水1小時, 可去除雪味和增加雞肉水份
Soak chicken wingettes in mild salted water for 1 hour, eliminating the freezer taste and making the chicken more moist.
3. 雞中翼汆水2分鐘後, 清水沖洗乾淨
Blanch chicken wingettes for 2 minutes, and rinse with cold water.
4. 除雞中翼外, 所有材料和汁料倒入小鍋大火煮滾
Besides chicken wingettes, put all ingredients and sauce into a small pot. And bring to a boil over high heat.
5. 放入雞中翼, 再次煮滾後上蓋, 轉小火焗煮15分鐘即成
Add chicken wingettes. Bring to the boil again, cover, turn to low heat, and simmer for 15 minutes, and serve.
