川味肉末炒豆乾 (2人份)
Sichuan Style Stir-fried Dried Tofu with Minced Pork (2 servings)
📌材料 Ingredients:
免治豬肉 Minced pork 300克(g)
鮮豆乾 Dried tofu 400克(g)
蒜蓉 Minced garlic 1湯匙(tbsp)
乾蔥碎 Chopped shallot 30克(g)
薑蓉 Minced ginger 30克(g)
豆瓣醬 Chili bean sauce 1湯匙(tbsp)
芫茜碎 Chopped coriander 少許(to taste)
📌汁料 Sauce:
米酒 Rice wine 2湯匙(tbsp)
生抽 Light Soy sauce 1湯匙(tbsp)
老抽 Dark Soy sauce 1湯匙(tbsp)
蠔油 Oyster sauce 1湯匙(tbsp)
🔪煮法 Method:
1. 調好汁料備用
Mix all the seasonings for the sauce, and set aside.
2. 鮮豆乾切塊
Cut dried tofu into pieces.
3. 小火燒熱油 慢煎鮮豆乾至微焦後起鍋備用
Stir-fry dried tofu until browned over low heat, then set aside.
4. 中火燒熱油 爆香乾蔥碎、薑蓉、蒜蓉、豆瓣醬
Turn to medium heat. Put in shallot, ginger, garlic, and chili bean sauce, and sauté them until fragrant.
5. 放入免治豬肉炒至熟透
Add minced pork and stir-fry until cooked through.
6. 鮮豆乾回鍋後倒入汁料續炒
Put back dried tofu and add sauce, then keep stir-frying.
7. 上蓋焗煮1分鐘
Cover the wok and cook for 1 minute.
8. 撒點芫茜碎即成
Garnish the dish with chopped coriander, and serve.
