Soak port trotter in mild salted water for 1 hour, eliminating the freezer taste and making the pork more moist.
2. 唐芹切段
Cut chinese celery into 2-inch-long sections.
3. 調好汁料備用
Mix all the seasonings for the sauce, and set aside.
4. 豬手粒汆水20分鐘, 然後清水沖洗乾淨
Blanch pork trotter for 20 minutes, then rinse with cold water.
5. 壓力煲放入豬手粒、八角、400毫升水, 上蓋燉煮30分鐘
Add pork trotter, star anise, and 400 ml of water. Cover, and simmer in the pressure cooker for 30 minutes.
6. 夾出豬手粒備用
Take all the pork trotter out, and set aside.
7. 小火熱鍋, 爆香薑蓉、蒜蓉、花椒、豆瓣醬
Low heat. Put in ginger, garlic, peppercorn, and chili bean sauce,
then fry them until fragrant.
8. 轉中火, 加入豬手粒續炒
Turn to medium heat. Put in pork trotter and keep stir-frying.
9. 加入唐芹和汁料後, 上蓋焗煮3分鐘即成
Add celery and sauce. Cover the wok and cook for 3 minutes, and serve.
