青椒炒皮蛋 (2人份)
Stir-fried Century Egg with Green Pepper (2 servings)
📌材料 Ingredients:
皮蛋 Century Egg 2隻(pcs)
青椒 Green pepper 200克(g)
蒜蓉 Minced garlic 1湯匙(tbsp)
辣椒碎 Chopped red chilli 少許(to taste)
📌汁料 Sauce:
米酒 Rice wine 2湯匙(tbsp)
生抽 Light soy sauce 1湯匙(tbsp)
麻油 Sesame oil ½湯匙(tbsp)
胡椒粉 Ground white pepper 少許(to taste)
🔪煮法 Method:
1. 調好汁料備用
Mix all the seasonings for the sauce, and set aside.
2. 皮蛋洗去木糠後大火蒸10分鐘
Wash century eggs to remove wood chaff and steam them over high heat for 10 minutes.
3. 皮蛋和青椒切丁備用
Dice century eggs and green peppers, and set aside.
4. 中火燒熱油 炒香蒜蓉、辣椒碎、青椒粒
Medium heat. Put in garlic, red chilli, and green pepper and fry until fragrant.
5. 加入皮蛋、汁料續炒
Add century egg and sauce, then keep stir-frying.
6. 上蓋焗煮1分鐘即成
Cover the wok and cook for 1 minute, and serve.
