豉椒芹菜炒蜆肉 (2人份)
Stir-fried Clams with Black Bean Sauce and Celery (2 servings)
📌材料 Ingredients:
芹菜 Chinese Celery 400克(g)
蜆肉 Clam meat 300克(g)
蒜蓉 Minced garlic 1湯匙(tbsp)
薑蓉 Minced ginger 1湯匙(tbsp)
辣椒(切粒) Diced red chili ½湯匙(tbsp)
📌調味料 Seasonings:
磨豉醬 Ground Bean Sauce ½湯匙(tbsp)
📌汁料 Sauce:
米酒 Rice wine 1湯匙(tbsp)
蠔油 Oyster sauce ½湯匙(tbsp)
生抽 Soy sauce ½湯匙(tbsp)
胡椒粉 Ground white pepper 少許(to taste)
代糖 Erythritol ½湯匙(tbsp)
🔪煮法 Method:
1. 蜆肉浸鹽水1小時
Soak the clam meat in salted water for 1 hour.
2. 芹菜切段
Cut the celery into 2-inch-long sections.
3. 調好汁料備用
Mix all the seasonings for the sauce and set aside.
4. 蜆肉汆水30秒
Blanch the clam meat for 30 seconds.
5. 中火燒熱油, 爆香蒜蓉、薑蓉、辣椒粒、磨豉醬和蜆肉
Medium heat. Add garlic, ginger, red chili, clam meat, and ground bean sauce to the wok with oil. Stir-fry until fragrant.
6. 倒入芹菜和汁料翻炒
Add celery and sauce, and keep stir-frying.
7. 上蓋焗煮1分鐘即成
Cover the wok and cook for 1 minute, and serve.
