香蒜蠔汁炒釀三寶 (2人份)
Stir fried Stuffed Three Treasures with Garlic and Oyster Sauce (2 servings)
📌材料 Ingredients:
鯪魚滑 Minced mud carp 200克(g)
青椒 Green chili pepper 30克(g)
豆卜 Beancurd puff 40克(g)
香菇 Shiitake 70克(g)
蔥粒 Diced scallions 30克(g)
蒜蓉 Minced garlic 1湯匙(tbsp)
📌汁料 Sauce:
米酒 Rice wine 2湯匙(tbsp)
蠔油 Oyster sauce 1湯匙(tbsp)
生抽 Soy sauce 1湯匙(tbsp)
代糖 Erythritol 1湯匙(tbsp)
鹽 Salt ¼湯匙(tbsp)
📌鯪魚滑調味料 Minced mud carp seasonings:
蔥粒 Diced scallions 30克(g)
胡椒粉 Ground white pepper ¼湯匙(tbsp)
鹽 Slat ¼湯匙(tbsp)
麻油 Sesame oil ½湯匙(tbsp)
🔪煮法 Method:
1. 調好汁料備用
Mix all the seasonings for the sauce, and set aside.
2. 青椒切圈後去籽
Cut green chili pepper into rings, and deseed.
3. 切掉香菇蒂
Trim off shiitake stems.
4. 豆卜用熱水沖洗後對半切開
Rinse beancurd puffs in hot water, then cut them in half.
5. 將鯪魚滑與調味料拌勻, 反覆摔打鯪魚滑增加魚肉彈力
Mix minced mud carp with seasonings. Beat the minced mud carp repeatedly to increase its elasticity.
6. 青椒、豆卜、香菇刷上粟粉後釀入鯪魚滑
Brush with cornstarch, and stuff with minced mud carp.
7. 小火熱油, 肉朝下慢煎釀三寶, 煎至微焦後起鍋備用
Fry stuffed three treasures meat side down over low heat. Fry until browned, then set aside.
8. 轉中火, 炒香蒜蓉後倒入汁料
Turn to medium heat. Fry the minced garlic until fragrant, then pour in the sauce.
8. 上蓋焗煮1分鐘即成
Cover the wok and cook for 1 minute, and serve.
