香辣肉末炒雙菇粒 (3人份)
Spicy Stir fried Minced Pork with Mushrooms (3 servings)
📌材料 Ingredients:
免治豬肉 Minced pork 300克(g)
香菇 Shiitake 150克(g)
杏鮑菇 King oyster mushroom 150克(g)
蒜蓉 Minced garlic 1湯匙(tbsp)
乾蔥碎 Chopped shallot 50克(g)
薑蓉 Minced ginger 20克(g)
指天椒碎 Chopped red chilli 10克(g)
📌汁料 Sauce:
米酒 Rice wine 2湯匙(tbsp)
蠔油 Oyster sauce 1湯匙(tbsp)
魚露 Fish sauce 1湯匙(tbsp)
麻油 Sesame oil 1湯匙(tbsp)
胡椒粉 Ground white pepper 少許(to taste)
代糖 Erythritol ½湯匙(tbsp)
🔪煮法 Method:
1. 調好汁料備用
Mix all the seasonings for the sauce, and set aside.
2. 香菇和杏鮑菇切粒
Dice shiitake and king oyster mushrooms.
3. 中火燒熱油, 炒雙菇粒至微黃後起鍋備用
Fry mushrooms until browned over medium heat, then set aside.
4. 中火燒熱油 爆香乾蔥碎、薑蓉、蒜蓉、指天椒
Medium heat. Put in shallot, ginger, garlic, and red chilli ,and fry them until fragrant.
5. 放入免治豬肉炒至熟透
Add minced pork and stir-fry until cooked through.
6. 雙菇粒回鍋後倒入汁料續炒
Put back mushrooms and add sauce, then keep stir-frying.
7. 上蓋焗煮1分鐘即成
Cover the wok and cook for 1 minute, and serve.
