麻油薑片炒雞球 (3人份)
Stir-fried Chicken with Sesame Oil and Ginger Slices (3 servings)

📌材料 Ingredients:
雞排 Chicken Chop     400克(g)
香菇 Shiitake               150克(g)
生薑 Ginger                    30克(g)
水 Water                         50毫升(ml)

📌醃料 Marinade:
生抽 Soy sauce                         1湯匙(tbsp)   
麻油 Sesame Oil                       1湯匙(tbsp)   
胡椒粉 Ground white pepper   少許(to taste)
粟粉 Cornstarch                        ½湯匙(tbsp)

🔪煮法 Method:
1. 雞排浸淡鹽水1小時, 可去除雪味和增加雞肉水份

Soak chicken chop in mild salted water for 1 hour, eliminating the freezer taste and making the chicken more moist.


2. 香菇、生薑切片, 雞排切件

Slice shiitake and ginger and cut chicken chop into chunks.


3. 雞排加入醃料醃15分鐘

Marinate chicken for 15 minutes.


4. 調好汁料備用

Mix all the seasonings for the sauce, and set aside.


5. 小火燒熱油, 慢煎薑片至微焦後起鍋備用

Fry ginger until browned over low heat, then set aside.


6. 轉中火, 倒入雞件煎至微焦

Turn to medium heat. Put in chicken and fry until browned.


7. 加入香菇炒香

Put in shiitake and stir-fry until fragrant.


8. 薑片回鍋, 加入汁料續炒

Put back ginger and pour in sauce, then keep stir-frying.


9. 加入50毫升水, 上蓋焗煮3分鐘即成

Add 50ml of water. Cover the wok cook for 3 minutes, and serve.
