香菇腐竹炆鴨 (4人份)
Braised Duck with Fresh Bean Curd Sheets and Shiitake (4 servings)

📌材料 Ingredients:
急凍低温燜煮鴨 Frozen simmered duck 800克(g)
鮮腐竹 Fresh bean curd sheets 200克(g)
香菇 Shiitake 150克(g)
蒜蓉 Minced garlic 1湯匙(tbsp)
薑蓉 Minced ginger 1湯匙(tbsp)
乾蔥碎 Chopped shallot 30克(g)
八角 Star anise 1粒(pcs)
桂皮 Cinnamon 10克(g)
指天椒碎 Chopped red chilli 少許(to taste)
芫茜碎 chopped coriander 少許(to taste)
📌汁料 Sauce:
沙茶醬 Sa cha sauce 1湯匙(tbsp)
蠔油 Oyster sauce 1湯匙(tbsp)
生抽 Light soy sauce 1湯匙(tbsp)
老抽 Dark soy sauce 1湯匙(tbsp)
米酒 Rice wine 1湯匙(tbsp)
代糖 Erythritol ½湯匙(tbsp)
🔪煮法 Method:
1. 調好汁料備用
Mix all the seasonings for the sauce, and set aside.
2. 鴨切件
Cut the duck into pieces.
3. 切掉香菇蒂
Trim off shiitake stems.
4. 鮮腐竹切段
Cut bean curd sheets into 2-inch-long sections.
5. 中火燒熱油, 爆香薑蓉、蒜蓉、指天椒碎、乾蔥碎、八角、桂皮
Medium heat. Put in ginger, garlic, chilli, shallot, star anise, and cinnamon, and fry until fragrant.
6. 放入鴨件和香菇翻炒至微焦
Put in duck pieces and shiitake and stir-fry until golden brown.
7. 放入鮮腐竹和汁料續炒
Put in bean curd sheets and pour in sauce, then keep stir-frying.
8. 倒入300毫升清水, 上蓋炆煮10分鐘即成
Add in 300ml of water, cover, simmer for 10 minutes, and serve.
